Buffalo (Bison) meat is DRY!!!! - and I mean it is extremely lean. At least the first chunk of steak I ate on a ranch in Alberta was kinda like eating tenderized leather - thank goodness it was a small chunk. It was tasty though, a lot like elk. I much preferred the burgers the rancher had made with half buff and half pork. Those Burgers were GOOD!! They must have been, since I recall the taste even after all these years. Of course part of that might have been because I was much younger and could still enjoy a long horseback ride through the Alberta foothills to build up my appetite. KP
